Collection: Old Cow Beef
The UK Beef industry is a complicated one and it’s rare that we know much about what we’re eating, how long the cow lived and what it ate. Maybe not everyone wants to know but for us, as farmers and butchers we know exactly this when it comes to our pork, lamb and chicken so for us it’s normal.
Typically the beef we cut is under 30 months of age, we usually get as close to this as we can for our own beef and look for organic, grass fed beef as our minimum requirements, beef in UK supermarkets is typically around 18 months, probably lived indoors over winter and is fed grain during this time.
So what is different about this Old Cow?
Slow grown for over 7 years this Shorthorn cow lived on Ash Farm in Bintree, Norfolk. An organic farm where their cattle live outside all year around on a diet of grass and homegrown hay.
This long life means we have some beautiful marbled beef with a stunning creamy fat giving an abundance of flavour, we have dry aged this beef for 49 days and put together some old cow beef boxes and some individual items.
As this is such a special product it is initially only being offered as a pre order product, it’ll be ready for collection from our shop on Saturday 30th March 2024
